パイナップルケーキ Pineapple Cake

台湾旅行のお土産にパイナップルケーキをいただいた。
甘い物はあまり得意でない私だが、パイナップルケーキは別格。積極的に食べたいものである。

台湾の「微熱山丘 SunnyHills」というまだ比較的新しいお店のものだ。
インターネットで調べてみると元々茶農家だったオーナーが、中国大陸から安価な茶葉が大量に輸入され始めたことで、その後の茶葉行の行方に不安を持ち、地元・南投の特産品を使って何かできないかと考え、思いついたのが南投産のパイナップルを使ったパイナップルケーキだったらしい。
材料にもこだわっていてオーストラリア産のバター、日本産の小麦粉、そして厳選された台湾産のパイナップル・ブランド卵を使用。冬瓜で作られた餡を混ぜる所も多いが、ここのパイナップルケーキは100%パイナップル餡が入っている。
封を開けると、まずバターの香りがたちのぼる。しっかりめに焼かれた生地が酸味を持ったパイナップル餡と絶妙にマッチしていて、非常に食べやすい。カロリーは高いのだろうが、これは美味しくてついあともう1つ・・・と手が伸びてしまう。
我慢するのだ、いやいや賞味期限が短いし、いやでもカロリーが・・・という己との戦いである。
なんでも11月には表参道にも支店が出来るそうだ。隈研吾氏の設計らしい。
台湾のお土産定番品だというのに、日本で美味しいパイナップルケーキは簡単に手に入らなかったので、朗報である。

I’ve got a pineapplecake as the souvenir from Taiwan.
I am not good at sweet staff but they are different.
However, this is “SunnyHills” ‘s pineapplecake. They are very dericious!!
According to their website, they are dedicated to cake’s queality. Butter from Australia, wheat flour from Japan and a pineapple from Taiwan and they also using brand egg.
It is a perfect marriage of butter fragrant dough and sourish pineapple filling.
I want to eat one more. But wait. Think about their calorie…
Good news is they are going to open a new shop in Tokyo next month.
Can’t wait!!

新米の季節 It’s time for new rice!

新米の季節だ。食欲の秋だ!
今日は鼻息荒く、とっておきのご飯のともをご紹介したい。
ご飯と箸を手にして読んでもらうと、これをおかずにご飯がすすむかもしれない!(←己にプレッシャー)

ご飯のともは順位付けされるほど、盛り上がる話題である。それゆえ数えきれないほどのご飯のともが全国にある。
今日は見た目は地味だが、かき込むご飯が止まらない一品「サバ味噌そぼろ」を紹介したい。売っていないので、作って下さい。
ちょっと手がこんでいるが、これも美味しいご飯を食べるため。新米を思う存分かき込んで欲しい。

作り方をざっと説明すると、
サバの味噌煮を作る。
骨をはずし、身をほぐす。
フライパンに生姜とネギを炒め、サバの身を入れて水分を飛ばす。
青唐辛子の醤油漬けを最後に加えて出来上がり。
子供向けには普通の醤油を加えて。
ご飯がすすむ、秋の食卓をご堪能あれ。

Autumn is the harvest season.
You can find many kinds of sesonal fruits, seafoods, vegetables.. but most of all, it’s the time for “shinmai”(new harvest rice)!
Rice is cultivated in all over Japan, and there are many brands. Some says that there are over 400 kinds of brands in Japan.
Some people like cooked rice which is various ingredients are combined with uncooked rice and liquid and steamed together. And it’s called “takikomigohan”. In this season, you can use various kinds of mashrooms, chestnuts or sweet potato.
But many Japanese say, we must taste “white rice” specially in this shinmai season!. They insist that the only rice worth eating is pure, unflavored white rice, simply steamed. So do I….!!
And I’d like to introduce an accompanying dish for your another bowl of rice today.
This is my original recipe called “saba-miso soboro”.
Simmered mackerel in miso and separate the flesh from the bone.
Stir-fry choped ginger and green onion and add mackerel to the pan.
Season it with green chilies pickled in soy sauce and stir-frying it until it is ready.

新しいもの、変わらないもの。New things and usual things.

久しぶりに赤坂を歩いた。
古い街だが、久々に行くと老舗が消え、新しいお店が増えていた。
移り変わりが激しいですなぁ。

変わらないものでは、100年以上続く老舗の和菓子屋さんに今日も何人か並んでいた。
ついふらっと、己も並んでしまう。看板商品の豆大福を1個だけ買う。
相変わらずニコリともしないおばちゃんも、なんだか懐かしい。

その足でもう一軒、老舗のパン屋「長野ベーカリー」へ寄る。
ここは創業1948年。ランチ時にはお惣菜パンがケースの中にずらりと並ぶ。
揚げたてのコロッケパンは大変美味しい。幼少の頃からコロッケパンが苦手だった私が初めて「う、うまい。」と唸った一品である。
さくさくの衣とお芋たっぷりのコロッケが、少し甘めのシンプルなパンに合う。
他に小さいフランスパンに、明太子とバターがたっぷり入った明太フランスや、カレーパンもおすすめだ。
ここはお店のおばちゃんもすてきだ。たまたま合計金額が「777円」だった時があり、「すごいね、良かったねー」と嬉しそうに言われ、なんだか得した気分になった。

さて、今日はあまり買った事の無いものにチャレンジ。ドーナツと黒豆きなこコッペ。
新しいものも新鮮で楽しいけれど、「いつもの物」があることも、通う楽しみになる。
どちらもバランスよくあるのが、良い街なのかもしれない。

I walked Akasaka area today. My previous workplace is in this area. So I was busy looking around because I came here for the first time in a long while. I have found that some new shops appeared but on the other hand, long-established shop closed. I think the face of the street was changing very fast.

However, I saw that a couple of people lined up in front of the shop which is well-established Japanese sweet shop following more than 100 years. I got in line and bought a “mamedaifuku” (rice cake stuffed with salt-seasoned bean paste).
I stopped by long-established bakery shop “Nagano Bakery” after that. They have many kinds of sandwiches and sand buns.
I bought a donut and a roasted-soybean-powdered paste sand bun today.

New things are very interesting but I like “usual” things, too. I’ll visit to long-established shop ‘cause I know that I can get my favorite usual thing at there.
I think it may be said that it is a good town to be mixed in a good balance both new shops and well-established shops.

北海焼きうどん Hokkai Yakiudon

お昼ご飯は、思いつきで作る料理が多い。
今日は食材が著しく少なかった。冷凍庫に冷凍うどんと、先日多目に焼いて冷凍しておいた焼き鮭があった。野菜室にネギもある。味噌もある。
これはまるで石狩鍋を思い起こさせる材料(と思うのは北海人だけか?)。

そこで作ったのがこの焼うどん。題して北海焼うどん。
美味しそうでしょ?美味しいのよ。
塩気が鮭によって違うので、味噌や醤油の量は適宜。控えめに。

今日はサービス精神満点で行程写真付き。しかも相当ピンボケしている。
では作り方。

Here is the recipe of  Hokkai Yakiudon(stir-fried udon noodles) for my lunch today.*This is original recipe. So you can’t order at the restaurant…

1 フライパンにごま油を熱し、ネギの小口切りを香りが出るまで炒める。
Heat sesame oil in a frying pan. Add shredded leek and cook lightly.

2 袋のまま電子レンジ600Wで2分加熱しておいた冷凍うどんを、1に投入。
Add frozen udon(in a bag) which heated at microwave oven 600W for two minutes.

3 ほぐしておいた鮭と、日本酒を振りさらに炒める。
Add separated salmon fillet (grilled beforehand) and sake.

4 味噌少々、醤油は香り付け程度加え、最後に粉鰹を入れ混ぜ合わせる。
Add miso ( 1/2 tsp) and just a little bit of soy sauce.

5 出来上がり。一味唐辛子を振って食べましょう。
Sprinkle shavings of dried fine bonito and cayenne pepper powder.

野菜摂取 Eat vegetables

pickles野菜が体に良いとわかっていても、よほど意識して自分で作ったりしないと沢山は摂れないだろう。
今日は気軽につまめてお料理にもお弁当にも使える、便利なピクルスを紹介したい。
私は冷蔵庫を開けるとつい、つまんでしまう。
酸味が苦手な人でも、野菜からの香りがうつったマイルドな酸味なので比較的食べやすいと思う。
お酢の量を加減しても良いだろう。
ポイントは野菜を茹でる時間と、水気をよく切る事。
実はやわらかい人参があまり好きではないのだが、カリカリと歯ごたえのある人参は独特の臭みがなく止まらない美味しさだ。
特に、我が姉に勧めたい。

<材料>
ブロッコリー 1個(一口大に切っておく)
人参 大1本(一口大の乱切りに)
パプリカ 黄とオレンジそれぞれ 1個ずつ(一口大に切っておく)
きゅうり 1本(一口大の乱切りに)
*野菜は歯ごたえのあるものならば何でもよいだろう。カリフラワーやズッキーニ、小タマネギ、セロリなども。色味が鮮やかになるよう作りたい。
ハーブ類を少なくして誰でも食べやすいようなレシピにしたが、好みでクローブ、マスタードシード、ディルなど入れても良い。

〜ピクルス液〜
米酢 100cc
水      カップ1
砂糖 40g
塩  大さじ1/2
黒粒胡椒 10粒
赤唐辛子 2本
ローリエ 1枚

<作り方>
1小鍋に(ステンレスや琺瑯など)ピクルス液の材料を入れ沸騰させ、冷ましておく
22L程度の鍋に湯を沸かし、塩大1/2を入れて野菜を20〜30秒ずつ茹でざるにあげ水気を切る。
3野菜が熱いうちにタッパーなど容器に入れ、1のピクルス液を注ぐ。
半日後位でも食べられるが、ピクルスらしく味がしみるのは2日後くらいから。冷蔵庫で1週間位保存可。
煮沸消毒した瓶で作る場合は冷蔵庫で1ヶ月保存可。

 

    • Do you think you should take more vegetables for your health?
      Well, If there are pickles in the refrigerator, you can take a lot of vegetables. Good thing is it is very easy to make and useful.
      You can use it in various ways such as side dish, snacks, and sandwitch, etc.
      The point is boiling time and drain fluid from vegetables.
      Here is a quick vegetable pickle recipe. You don’t need sterilize in boiling water but you must keep it in the refrigerator.

 

  • <Ingredients>
    One broccoli
    One carrot
    Each one of yellow and orange paprika
    One cucumber*Cut each egetable into bite-size chunks.

 

 

  • ~Pickling liquid~
    100cc of rice vinegar
    1 cup of water
    40g of sugar
    1/2 tbs of salt
  • 10 grain black pepper
  • Two red peppers
    One bay leaf

 

 

  • <How to make>
  • 1 Bring a saucepan (*Be sure to use a NON-metal pan) and put pickling liquid ingredients to the pan and increase heat to high and bring to the boil. Cool it down.
  • 2 Boil vegetables in salted water for 20-30 seconds and drain well.
    3 Put the vegetables while it’s hot in container and pour the pickling liquid.

 

*You can start eating it after half day at least, but better taste after two days or more. Keep it in refrigerator.
