冬至 on the winter solstice…

仕事で北海道入り。
札幌は、昨晩から雪がしんしんと降り続いている。
雪は音を吸収するので、車の通る音も小さく静かだ。
16時前だというのにもう空は暗い。
I’m in Sapporo now. Snow was been falling steadily since last night.
Snow absorbs sound.  It is 16:00 and the sky turns dark, very quiet.

今日は冬至。
かぼちゃ餅のおやつをいただいた。
蒸してつぶしたかぼちゃに片栗粉、塩、砂糖を入れ、丸く平べったい形に整える。油をひいたフライパンで焼き色がつくまで焼く。
ストーブの上であぶって食べても美味しいんだって。
I ate squash-mochi on the the winter solstice today.
Steam a pumpkin and smash it. Add starch, salt, sugar and gather dough.
Heat a bit of cooking oil or butter in a frying pan and bake it.

クリスマス・フェアが先週末開催され、無事終了。
年末の忙しい時期にも関わらず、沢山の方にお越し頂き本当にありがとうございました!
お話をさせていただいたり、直接商品に触れていただいたり、私自身も心から楽しめた2日間でした。
遠方にお住まいなど、お越し頂けなかった方々にも写真でお楽しみいただければと思います。
またこのような即時販売イベントや、お料理のイベントなど開催していく予定です。お楽しみに。

イベント情報その3 Christmas fair info. #3

白金台の駅から目黒方向に歩く事数分、自然教育園の向かい側に大きめのガラス窓が印象的な自家焙煎珈琲店 Jubilee Coffee and Roasterさんがある。今回クリスマスフェアのために、店主の関根さんと一緒に冬向けのブレンド珈琲を作った。
After a couple of min. walk from Shirokanedai sta., you’ll find the home roasting coffee shop “Jubilee Coffee and Roaster”, opposite side of The Institute for Nature Study. I asked Mr. Sekine who is the shop owner to make a original blended coffee together for “LOCCA & Kyoko Creation Christmas Special Fair at Shirokanedai” coming on this weekend.

10種類の豆の中から、まず、どういうイメージのブレンドを作りたいのか、方向性を決める。
『カッピング』で香りや味等を確かめる。カッピングは、ワインを選ぶ上でのテイスティングのように コーヒーの甘味や酸味、苦味、あとに続く余韻などといった味や香り、 品質の良し悪しを客観的に、総合的に判断するもの。

まず、挽いた豆をガラスのカップに入れ、香りを嗅ぐ。紙に書いてあるのは豆の種類(写真下左)。次にお湯を注ぎ入れる。むくむくと豆が膨らむ(写真下右)。鼻を近づけて香りをよく嗅ぐ。
I tried “coffee cupping” to dicide which coffee beans will be the main beans for this blended coffee. Coffee cupping is the practice of observing the tastes and aromas of brewed coffee and analyze and grade different beans for quality.
First of all, smelling the dry grounds (photo in left below). Add hot water and smelling their aroma (photo in right below).

抽出後スプーンで表面のコーヒーを割り、ゆっくりかき混ぜ、表面に浮いている粉をすくいとる。スプーンでコーヒーの味をみる。実際は勢い良く吸い込んで甘み・酸味・苦み・後味・コク・バランスなど判断するそうだが、慣れないのでちびちびと口に含んで確かめてみた。豆によってこんなにはっきり違うとは!一度にこれだけの味をみることは普段ないので、面白い。
Break the surface of the samples after extracted, each cup is skimmed clean of grounds to allow for tasting. In a professional cupping, cuppers taste the coffees by slurping them from spoons, being sure to aspirate the coffee all over their mouths and check the sweetness, sourness, bitterness, aftertaste, richness or balancing as well. It was the first experience for me, but was very interesting because I’ve never had to taste such a different kinds of beans at the same time.

気になる豆を実際に淹れてみる。
今回は、華やかな果実の香りが特徴のエチオピアをメインに。
方向性が決まったところで、さらにコクなどを足してみましょうか、と次はブレンドのサンプルを数種類作ってもらうことに。
本来は豆一種類の方が、スペシャリティコーヒーを飲むのに適しているのかもしれない。しかし逆にブレンドすることで豆1種類だけでは持ち得ないテイストをプラスし、1 + 1= 2+αが生まれる面白さもある。
Now, Sekine-san brewed some coffee from them. We’ve chosen Ethiopian beans as main beans for this time.
Actually, it would be suitable drink just one kind of the beans as for a specialty coffee but I think it would be very interesting sometime ‘cause it would be able to add some other taste by blending it which is not originally has.

後日、サンプルができあがった。
バランスを考えながら、比率など変えて3種類作っていただいた。
ブレンドといえども、華やかなエチオピアの個性がわかるように、そしてとろりとしたコクもある冬らしいオリジナルブレンドが出来た。

珈琲豆は、理想は豆のまま購入し、冷凍庫や冷蔵庫など冷暗所で密閉保存するのが良いそうだ。
新鮮な豆を購入することは重要だが、淹れるときは焙煎したてよりも、24時間以上経った方が甘みや香りが立ってくるという。
毎日少しずつ変化する味を楽しみながら、なるべく早めに飲むのが良い。

ちなみに「酸味の少ない豆」を購入時に聞くお客様が結構いるそうで、かくいう私もそうだった。が、新鮮で質の良い豆は嫌な酸味ではなく、むしろ爽やかな、後味をすっきりさせてくれる重要な味の要素のひとつ。嫌な酸味は「酸化」が原因の場合も多い。頭でイメージする「甘みのあるコーヒー」、甘みを感じるためには程よい酸味やコクなどのバランスがあってこそなのだ。
また、豆は同じ種類でも、毎回全く同じ焙煎にはならない。生豆は袋ごとに状態が違い、焙煎する釜の状態などもその都度、微妙に調整しているそうだ。まさに職人仕事。

穏やかな雰囲気の関根氏、質問すると何でも丁寧に教えてくださる。こんな珈琲店が近所に出来て本当に嬉しい。

After you bought whole coffee beans, must be kept in an airtight container and be put in a cool dark place. As a matter of course to buy fresh beans, but sweetness and a fragrance become strongly more than 24 hours after roasting.
Enjoy the changing their taste and use them as soon as possible.
By the way, some people ask Sekine-san which beans with a little sourness? So did I. But he said that if beans are fresh and good quality, you’ll think sourness could be briskness and leave a clean aftertaste. Good coffee has a good balance of not only sweetness but also sourness. Also, beans are not always same roasting. Green coffee beans has different conditions in each bags even if it’s same name of the beans. So Sekine-san will control very delicately everytime when he roast beans. Such a professional work!
He is a very gentle person and answers my elementary questions nicely. I’m so happly to have a reliable coffee shop nearby my area.

前回お伝えしていたように、今回はうつわについていくつかご紹介します。
クリスマス・フェアには益子の寺村光輔さん、田代倫章さん、潮来市の平松祐子さんのうつわが並ぶ予定です。
個人的に好きで使わせていただいていた方々のうつわなので、私自身、特別な思いがあります。

寺村さんのうつわは、土の持つ素朴さや温かみだけでなく、シンプルですっきりした形と光沢を抑えたうつわで盛るものを選びません。 例えば地味な色合いの、うーん緑があったらなぁ・・という料理でも、寺村さんのうつわに盛ると途端に美味しそうに見え、食欲が沸きます。 作っておきながら言うのもなんですが、「あら、あなた美味しそうだったのね」と料理を見直すことも少なくありません。お料理が楽しくなります。

I’d like to introduce some potteries for the Christmas event coming next weekend! Potteries made by Kousuke Teramura, Toshifumi Tashiro who are working in Mashiko (Tochigi prefecture) and Yuko Hiramatsu in Itako (Ibaraki prefecture). Teramura-san make simple and warm design, less lustered potteries which can be used for many types of cooking. When you think you need put some green to enhance the colorfulness of dishes, try his potteries. Once you’ll put them on his dish, it’ll strangely looks delicious and makes you hungry. I’m very sure that you’ll enjoy cooking with his potteries!

こちらは長石釉象嵌7寸鉢(径約20cm)。
底が平らなので、こういった盛り方もできます。

田代さんのうつわは、なんというかマニア心をそそられます。うつわには詳しくなくとも、この質感はどうやって出しているんだろう・・などと知りたくなります。この微妙な色合いと、独特の質感、フォルムの美しいうつわをご覧ください。 このうつわは本焼きを2回おこなっています。画像ではわかりにくいですが内側の色の変化が特徴的です。この色の変化を出す為に2回焼く必要があるそうです。最初の本焼の際に内側にとある仕掛けを施し、窯から出た器を軽く磨いた後、灰釉を吹き付け、2度目の本焼きに入れ焼成しています。 ヨーロッパの冬を思わせるグレーがかった色合いのこのうつわ、何を盛ったら良いかわからないと思われるかもしれませんが、意外と何でも受け入れてくれますよ。

Tashiro-san make potteries painstakingly piece by piece. I always want to know how could he make his potteries texture or color alternation. By Tashiro-san’s explanation, he glost firing this pottery in twice. There is color alternation inside by some special devices. Very beautiful grayish color pottery.

それから平松祐子さんのうつわ。 瀬戸の磁器土をつかっています。 花びらのような形で可愛らしさもありますが、甘すぎないデザイン。 潔い白磁器がすっきりとした印象です。 径約9cmの小皿ですが深さがあるのでとても便利にお使いいただけます。 お酒のおつまみを入れてみたり、和菓子にも・・・。お醤油の色も綺麗に映えます。

And Hiramatsu-san making her works with Seto clay. The design is likea a flower petal, but it’s not too much romantic.Graceful white ceramic plate. It has approx.2.5cm depth so you can use it in various uses.

12月14日・15日に開催するクリスマスイベントの情報を少しお届けします。
と同時に、お知らせ。来年1月を目標に(!)LOCCAオンラインショップを立ち上げるべく、現在準備中です。

今回のイベントでは、オンラインショップでもお取り扱いする作家さんの作品や商品も並びます。
イベントには参加出来ない方も、オンラインショップが立ち上がりましたら是非ご覧下さい。
オンラインショップはまた準備ができ次第、ブログでもお知らせいたします。
作家さんへの取材記事もブログページに掲載していく予定です。
今回からお取り扱いさせていただくことになった作家さんの作品や商品を、いくつかご紹介していこうと思います。
まずはciitoさん。
糸にまつわるモノづくりをテーマに、様々な作品を作られています。

今回はネックレス(2種類)、ピアス、ブレスレットをLOCCAをイメージしたカラーリングで作っていただきました。
ciitoの丹生さんが作る作品は、どれも色の組み合わせが絶妙。グレイッシュな色味が一色加わるだけで、ぐっと違う印象になります。
丸いパーツはウッドビーズに1つ1つ手で糸を巻き付けてあるものですが、軽いので着けていてとても楽です。
カジュアルにも、ドレスアップにも、様々なシーンでお使いいただけると思います。
次回はうつわについてご紹介します!

Today, I’d like to write little more about “Kyoko Creation and LOCCA 2013 Christmas Special Fair at Shirokandai” (Dec. 14-15) and also about online shop. We’re preparing for the online shop on LOCCA’s website for start in next January (I hope…).
We’ll offer various potteries, casual accessories, stationery and handmade soap  by Japanese craft artists / maker at the special event above and we’ll also sell those items (not exactly the same things) on our online shop. We’ll inform it as soon as we’ll ready to start the shop.

Now, I’m going to introduce some adorable accessories by “ciito“-made by Junko Nibu.
Wiped a embroidery thread around wood beads carefully and make “a thread ball” and connected those thread balls for necklace, pierced earrings and bracelet. Very light and swings gorgeously.
The combination of colors is so exquisite. It would be nice to wear in both casually or dress-up style.
I’ll introduce potteries in the next time!
